One of my faves was a dessert. I'm not a huge dessert eater but this is healthy and yum. My friend cooked it one night while we were over for dinner. It's sort of a crumble, here's the recipe.
2 cups frozen blueberries
1 large apple (skin removed & cut into thin strips)
1 tablespoon brown sugar
1/4 cup oats
1/4 cup slivered almonds
Place blueberries on the bottom of the tray, line apple on top of blueberries,
mix dry ingredients together place on top, bake for 25 minutes

Have a ever mentioned how much I love Donna Hay? If you don't know who she is, I suggest you open your browser right now and find out, you will not be disappointed. Her recipe book 'no time to cook' is bloody fabulous. We cooked this dish a couple of nights ago and were blown away! Not just by the heat cos boy was it spicy, but all the flavours. By far my favorite meal at the moment. You can find it here.
So easy and cheap, most ingredients we already had in our pantry and cheap is definitely what we need in this house at the moment with the wedding less then 2 weeks away. 2012 has not been too kind to us, let's hope February brings smoother sailing seas!
