Tasty Tuesday

I used to hate staying home all day, i dreaded the thought of a boring day at home with no plans, thats until we all got sick at the beginning of the year and were forced to stay home. Now i dont mind it so much, im learning to enjoy my own company and hanging out with Seb, i should be happy that i get so much one on one time with my baby.
There is so much fun to be had around the house and lots of cleaning and organising too, it makes me feel accomplished when my pantry is in order and all the washing is clean, folded and put away.

Cooking is another great thing i forgot about. It's somewhat educational for Seb, fun and delish. We all have to eat so why not try new things with the food that has to be eaten in the fridge. My absolute favourite cook book is Donna Hay's  'No time to cook'. The whole book is filled with fast and easy recipes with ingredients we mostly have kept in the house.

So i decided to make Pumpkin & coconut soup. The weather around here has not been soup kind of weather but it was raining so i decided to pretend it was winter.

You will need:
1.5 litres chicken or vegetable stock
1 tablespoon fish sauce
4 kaffir lime leaves
1.5 kg, peeled, seeded and chopped pumpkin
1 1/4 cups coconut milk
1/2 cup coriander leaves
Lime wedges to serve
finely sliced long red chilli, to serve

I didnt have enough pumkin so i added 2 peeled and chopped carrots instead.
I also hate coriander so i left that out.






Place a large pot over medium heat, add stock, fish sauce, lime leaves and pumkin, bring to the boil.
Cook until pumpkin is soft.
Remove from heat and remove lime leaves.
I let it cool slightly before blending it in batches. Instead of garnishing with the chilli i blended it with the pumpkin mixture.
Return mixture to pot and simmer while adding the coconut milk.
Serve with lime wedges and coriander!

It was super delish but definitely recommended for winter as it was quite heavy with all that coconut milk, next time i might try it with coconut flavoured evaporated milk for a lighter texture.
